This month, we are delighted to shine the spotlight on Sue, a cherished member of our community. Sue has graced our residence with her presence, contributing to the rich tapestry of shared experiences that make our community truly special.
Join us as we explore the unique facets of Sue’s life, celebrating the joy and resilience she brings to our community.
A few of Sue’s favourite life memories:
Step into Sue’s world of cherished memories, where the aroma of stews and mince pies weave through the echoes of days gone by. Two decades of culinary artistry marked her time as a chef at the Avalon Hotel in Shillelagh. A daily five-mile cycle to and from work on her trusty push bike was the rhythm of those years, each pedal carrying her closer to the heart of her culinary passion.
Sue paints a vivid scene of a peculiar encounter during one homeward journey from the Avalon—one that involved a baby pig and a makeshift transport home on her bicycle. The pig became a part of her family, a story both heartwarming and unexpected (the baby pig was then fattened before eaten), a testament to the quirks of rural life.
Sue shares with us, recollections of a time when 50 shillings per week was the norm, an era of simplicity that she remembers with a mixture of nostalgia and humility. Sue also recalls the ration books which were used during her childhood. Trips to the shops were threads in the fabric of resilience woven by Sue, her kin and all Irish families during World War II. Her childhood is nevertheless adorned with the radiant glow of familial happiness.
In the tapestry of Sue’s past, the absence of electricity casts a warm glow of oil lamps and candles. Journeying anywhere far involved the rustic charm of an ass and cart—a symbol of Irish rural life’s simplicity. Sue fondly recalls the thrill of leaping into the moving cart, a dance with the past that brings a smile to her face.
Her narrative takes a turn toward the practicalities of life, where memories are intertwined with survival. The image of her mother skilfully preparing chickens for sustenance is a testament to the resourcefulness embedded in Sue’s upbringing.
Amidst the challenges of life then, Sue’s festive spirit shines through as she reminisces about crafting Christmas cakes and puddings, sharing them generously with her neighbours in Carnew. In Sue’s world, the warmth of the kitchen and the joy of giving are timeless elements that bridge the years, offering a glimpse into a life well-lived.

Sue smiles. She’s thinking about her long walks with our exceptional healthcare assistants. In those moments, she immerses herself in the crisp, fresh air and picturesque surroundings—a therapeutic experience that adds a touch of serenity to her days.
Sue eagerly anticipates the arrival of spring, relishing the time spent in our courtyard gardens and the lively gatherings hosted there. These garden parties, attended by residents, staff, and the wider community, create an atmosphere of camaraderie that Sue holds dear.
Venturing further into the outdoors, Sue expresses her passion for nurturing the garden, meticulously weeding and tending to the blossoming plants. Her efforts contribute to creating a haven of tranquillity for all at the nursing home.
Amidst all this, Sue enjoys staying seamlessly connected to her family through video messaging, bridging the physical distance with heartfelt conversations that bring smiles and a sense of connection.
It is undeniable that Sue’s favourite activities not only mirror her personal preferences but also the vibrant community spirit that flourishes within the nursing home.
